That pic sure woke up my tastebuds.

Thanks for not filleting that fish out and throwing away some of the best parts.

I've seen so many people down in Okeetantee Fish Camp fillet that little bit of meat on each side and toss the rest of the carcass. After frying, they wind up with not much more than a fish nugget.

Growing up on mullet, we threw nothing away but the entrails. We ate the backbone meat, rib meat, etc. The head we kept for catching bluecrabs (no pun intended, ha!)

I agree, Gil.

I think filleting is to fish what red paint is to pistachios: its sole purpose to get women to eat it.
