A nice 5 lb chunk of Prime Prime Rib coated with some EVOO!

A little CBP, Sea Salt and Celery Seed rubbed in and ready for thr grill.

On to the grill for the sear with some taters.

Flipped over first time.

ANd the other side.

I mopped it with a mixture of Worshy, soy, honey, Balsamic Vinegar and Bourbon! Ready for the smoker. Cooked at 225F for about 2.5 hours.

At the same time we slide some bacon wrapped asparagus.

And the finished spears.

Sorry no plated pix, the natives was HOOngry. I ran a about 45 minutes long on the cook to get to 125F. Then rested for 35 minutes while the nasty natives were chewing on my ankles. Restless antsy bunch you know. They were all fat and happy in the end.
