Blackened Kingfish

With my wife gone to Portland for the week I have to cook for myself. Blackened Kingfish with chili sauce and red pepper jelly honey sauce. I am really suffering…

Looks gooood!! How was that kingfish?? I usually find it kinda mushy. Might help to hot sear it. :thumbright:

It was very good. Fish was the usual off white King color, but cooked it was white, moist and flaky like any fish. Coated with blackening and cooked each side in a hot cast iron with a bit of oil. Will cook same way next time for some fish tacos.

I smoked half of the King and got 15 cups of meat, and made a few batches of spread that was awesome. Still have some in freezer for future batches.

I have tried blackening white fish several ways but its still got no rhythm.
