Chili rubbed venison tenderloin with compound butter

I made this the other night. I make it a lot actually. It is a Southwestern style chili rubbed venison tenderloin served over buttermilk mashed potatoes, topped with lime crema with garlic wilted spinach and cherry tomatoes topped with a lemon zest compound butter. I made it up but I could walk you through it if you are interested. Beef works but with the venison, it is sublime!

Step by step on Saturday. I am whipped. I made pizza tonight from scratch and took some pics. I'll post that too with a play by play.

I am training for my retirement job as a beer pub restauranteur. I am a home brewer too. Don't get me started.

Working up a traditional Belgian white now. Ale is going in the bottles next week.

Nice... Never brewed a White... Might go with a chocolate stout or maybe a heffe weisen.

MMM... poached pompano in a citrus beurre blanc with fresh grilled veggies and a cold Belgian. Where the hell is DaveR catching those little bastages?
