Cinco De Mayo...

Had the day off so I decided to play. First up was beans. They simmered all morning till tender. Later they will become refried beans.

Sauted Onion

Added beans.

Cooked til done. Very tasty as is.

Next was a pot of red. aka Beef simmered in red chiles.

First soak red chiles in broth and puree.

Brown beef in some oil.
Image

Add puree and simmer all day.

On to some Tortillas.

Make dough, form into balls and let rest.

Cook in a dry saute pan.
Image

Once bubbly flip and cook til done. Store between sheets of parchment.

Lastly I am cooking up some tamales.

Make dough

Stuff and form into tamales inside corn husks.
Image

Steam for an hour and a quarter.

Any meat in the tamales or are they wish tamales? Looks good!
