Started out with a whole poook t-loin, de-fated it and cut it in thirds.
Then I spiral butterflied the largest piece.
Then I made some fresh cranberry and apple sauce.
Stole some fresh herbs from the garden, chopped and soaked in evoo.
Vac packed the poook in the Evil Brown Liquid to sit in the frige a while.
Pulled it after marinating for about 2 hours.
Filled the right end with cranberry and apple sauce.(lost pic?) Then coated the outside of the poook with the EVOO and herb mix as I rolled it up.
Then hit it with my dry rub.
AND bacon wrapped.
After 4 hours @250F, 170F internal temp
Sliced.
And plated... Hey I forgot the candied yams...Oh well.
